Easily soluble in water (119.8% at 20 °C) and glycerol; aqueous solution is neutral; slightly soluble in ethanol.
Uses:Used as a nutritional supplement, firming agent, flavor enhancer and processing aid in the food industry. As a brewing additive, it supplements magnesium in brewing water and serves as a fermentation nutrient source to improve fermentation performance. It can also improve the flavor of synthetic sake (0.002%) and adjust water hardness.
