Physical Properties:Colorless crystalline solid with an acidic taste, combustible. Exists in two crystal forms. Relative density 1.572 (25/4°C), melting point 185°C, boiling point 235°C (decomposes), sublimes on distillation under reduced pressure. Soluble in water, slightly soluble in ethanol, ether and acetone; 1 g dissolves in 13 mL cold water, 1 mL boiling water, 18.5 mL ethanol, 6.3 mL methanol, 36 mL acetone, 20 mL glycerol and 11 mL ether, almost insoluble in benzene, carbon disulfide, carbon tetrachloride and petroleum ether.
Uses:Used as a flavoring agent, acidulant, buffering agent and preservative in the food industry for soy paste, soy sauce, seasonings, ham, sausages and seafood products. In pharmaceuticals, it is used to synthesize antidotes, diuretics, sedatives, hemostatic agents and antibiotics. In electroplating, it acts as an ion chelating agent to prevent metal corrosion and pitting. It is also used in the production of surfactants, detergents, depilatories, toothpaste and lubricant additives.
