- 卡拉胶是从红藻中提取的多糖亲水性胶体，由半乳糖、3,6-内醚半乳糖及硫酸酯的钙、钠、钾、镁等盐类组成。具有优良的增稠、稳定、乳化、胶凝性能。其凝胶为热可逆凝胶，加热融化，冷却后复凝。溶解性好，可溶于热水，冷水中可溶胀；能与蛋白质发生离子相互作用，与刺槐豆胶、魔芋胶复配可改善凝胶强度和弹性。

Physical Properties:Carrageenan is a hydrophilic polysaccharide colloid extracted from red algae, composed of galactose, 3,6-anhydro-D-galactose, and calcium, sodium, potassium, and magnesium salts of sulfate esters. It exhibits excellent thickening, stabilizing, emulsifying, and gelling properties. Its gel is thermoreversible, melting upon heating and reforming upon cooling. It has good solubility, dissolving in hot water and swelling in cold water. It can interact with proteins through ionic interactions and can be blended with locust bean gum or konjac gum to improve gel strength and elasticity.
