Physical Properties:Soluble in water, insoluble in ethanol and ether. The pH of a 5% aqueous solution is about 5.0~8.0. Depending on the iron content, it appears as green (Fe 14.5%~16.0%) or brown (Fe 16.5%~18.5%) crystals, both being complex salts composed of iron, ammonium, and citric acid. Both forms are deliquescent, prone to mold, odorless, with a metallic iron taste. The green form is photosensitive and can be reduced to ferrous salt under light.
Uses:Used as an iron fortifier in foods such as dairy products, wheat flour, biscuits, milk powder, and beverages, with better absorption than inorganic iron; also used as a blood tonic in medicine. It is applied in photography, pharmaceuticals, as an anticaking agent, and as an iron source in microbial culture media.
