Physical Properties:Light yellow solid powder, a natural enzyme preparation, soluble in water. High degree of protein hydrolysis, up to 60% or more; amino nitrogen content exceeds 2.5g/100g (dry basis); effective protein utilization rate exceeds 85%. The hydrolysate is rich in characteristic flavor amino acids, with a strong and pleasant flavor and no bitterness, completely avoiding harmful by-products produced by acid-alkali hydrolysis. It is easily inhibited or destroyed by metal ions such as Fe3+, Cu2+, Hg+, Pb+ and oxidizing agents.
Uses:Mainly used for the hydrolysis of animal proteins including poultry, pork, beef, bone by-products, fish, shrimp, shellfish and other aquatic products, for producing various meat flavors, bone soup bases, and meat or seafood extracts. It is also suitable for producing bone extract, bone oil, bone glue, collagen protein, thermal reaction bone soup powder, calcium-phosphorus preparations, hydrolyzed animal protein (HAP), plasma protein and heme.
