Physical Properties:Colorless crystals or white crystalline powder, odorless with an acid taste, stable in air. It is a racemic mixture of equal amounts of D- and L-tartaric acid, usually containing one or two molecules of water of crystallization, losing water of crystallization when heated to 100°C. Density 1.697, solubility in water 20.6%, about 1% in ether, 5.01% in ethanol. Soluble in polar solvents such as methanol, ethanol and glycerol; slightly soluble in ether; partially soluble in chloroform.
Uses:Widely used in food, pharmaceutical, chemical, light and other industries. In the food industry, it is an excellent acidulant with an acidity 1.2-1.3 times that of citric acid, often compounded with citric acid and malic acid for use in beverages, canned foods, jams and candies. It can also be used as a chelating agent, antioxidant synergist, flavor enhancer and quick-acting leavening agent. In the pharmaceutical industry, it is used as a pharmaceutical intermediate and efficient resolving agent. In the chemical industry, it is used to produce tartrates and tartaric acid esters, and as a cleaning and polishing agent for metal surfaces. In the textile industry, it is used with tannin as a mordant for acid dyes. It is also used in leather, cement, photographic development and other industries.
