Physical Properties:Dark red to purplish-red liquid or powder obtained from dried female cochineal insects; the main coloring component is carminic acid. It is readily soluble in water, ethanol and propylene glycol, slightly soluble in fats and oils, and practically insoluble in ether, chloroform and petroleum ether. The color is pH-dependent: orange-red in acidic media, purplish-red in neutral to slightly alkaline media, and bluish-purple in alkaline media. It is relatively stable to light and heat, but strong alkali or prolonged heating darkens the color.
Uses:Used as a red colorant in food, beverages, cosmetics and pharmaceutical products, and also applied in biological staining and as a laboratory indicator. In the food industry, it is commonly used to color candies, jams, meat products, bakery products and alcoholic beverages, and must be used in accordance with relevant national standards.
