- 本品为白色至淡灰色结晶或结晶性粉末，有极轻微特殊气味。溶于乙醇、乙酸乙酯、异丙醇及植物油、猪油等，几乎不溶于水（25℃时溶解度<1%，95℃时约5%）。熔点126.5~128.5℃，沸点295℃。分子量166.22。油溶性良好，遇铁、铜不变色，但在碱存在下可转为粉红色。抗氧化性能优越，比叔丁基对羟基茴香醚、2,6-二叔丁基对甲酚和没食子酸丙酯强5～7倍，耐高温（230℃以上），并具有抑制细菌和霉菌生长的作用。

Physical Properties:White to light gray crystalline powder or crystals with a very slight characteristic odor. Soluble in ethanol, ethyl acetate, isopropanol, vegetable oil, and lard; almost insoluble in water (<1% at 25°C, about 5% at 95°C). Melting point 126.5–128.5°C, boiling point 295°C. Molecular weight 166.22. Good oil solubility; does not discolor in contact with iron or copper, but may turn pink in the presence of alkali. Superior antioxidant performance, 5–7 times stronger than butylated hydroxyanisole (BHA), 2,6-di-tert-butyl-4-methylphenol (BHT), and propyl gallate (PG); heat-resistant to above 230°C, and inhibits the growth of bacteria and molds.
Uses:Used as an oil-soluble antioxidant to prevent or delay oxidative rancidity of oils in food, improve food stability, and significantly extend the shelf life of oils and fat-rich foods. Particularly suitable for vegetable oils such as salad oil, blended oil, and high-cooking oil, as well as fried foods, dried fish products, biscuits, instant noodles, quick-cooking rice, canned dried fruit, cured meat products, and roasted nuts. According to GB2760, the maximum usage level is 0.2 g/kg, and the recommended dosage is generally 0.01%–0.02% of total fat content.
