Physical Properties:Red-purple to dark red crystalline powder with a slight characteristic odor. Almost insoluble in water, propylene glycol, glycerol, acids and alkalis; freely soluble in dichloromethane, chloroform, carbon disulfide and other organic solvents; slightly soluble in ether, petroleum ether, cyclohexane and vegetable oils; almost insoluble in methanol and ethanol. Dilute solutions appear orange-yellow, turning orange at higher concentrations, and may show a slight red tint depending on solvent polarity. Unstable to light, heat and oxygen, not resistant to acids, but relatively stable under weak alkaline conditions. Melting point approximately 176-184°C, boiling point approximately 654.7°C (predicted), density approximately 0.941 g/cm³.
Uses:β-Carotene is mainly used as a food colorant and nutritional fortifier in products such as flavored milk, fermented milk, candy, beverages, jams and frozen desserts, imparting a bright yellow or orange color. It also possesses antioxidant properties and is used in dietary supplements and health foods. Industrially, it can serve as a dye or pigment, and as a raw material or intermediate in certain chemical reactions.
