Physical Properties:Appearance: light yellow or ivory oily, fatty or waxy solid; slight fatty odor or odorless. Insoluble in water and glycerol, but forms a stable hydrated dispersion in water with good emulsifying properties; readily soluble in vegetable oils, and soluble in hot ethanol, ether, chloroform and acetone. Melting point approximately 55-60°C; HLB value approximately 3.8.
Uses:Mainly used as a food emulsifier, dispersant and stabilizer in dairy products, margarine, confectionery, chocolate, ice cream, pastries and bread to improve texture, mouthfeel and shelf life. It is also used in cosmetics, detergents, plastics, rubber, coatings and textiles as an emulsifier, lubricant, softening agent and processing aid.
