It exhibits excellent emulsifying, dispersing, wetting and foaming properties, having both hydrophilic and lipophilic characteristics. Soluble in ethanol, acetone and ethyl acetate; dispersible in water to form stable emulsions. Good heat resistance and stable at high temperatures.
Uses:Used as a food emulsifier and acidity regulator, suitable for margarine, ice cream, bakery products, confectionery and milk-containing beverages; it prevents oil-water separation, improves texture and retards starch retrogradation. Also used as an emulsifier and solubilizer in cosmetics and pharmaceutical ointments to give a smooth, fine texture. In plastics processing, it acts as a lubricant, antistatic agent and antifogging agent.
