Physical Properties:White to yellowish-brown powder, lump or waxy solid, odorless or with slight characteristic odor. High-HLB products are readily soluble in water, while low-HLB products are readily soluble in oils and fats; dispersible in ethanol, propylene glycol and other solvents. Stable to heat, acid and alkali, with excellent emulsifying, dispersing, wetting and foaming properties.
Uses:As a highly effective food emulsifier, it is widely used in meat products, baked goods, ice cream, confectionery, beverages, etc., improving texture, preventing oil separation and extending shelf life. It also exhibits fresh-keeping effects and can be used for coating preservation of fruits and vegetables. Being mild to skin and eyes, it is also applied in pharmaceuticals and cosmetics.
