Produced by dehydration polymerization of tartaric acid at high temperature. It has complexing ability, combining with potassium or calcium ions in tartrates to form soluble complexes, keeping tartrates in a dissolved state.
Uses:Used as an acidity regulator, applied as needed in canned grapes. The addition of metatartaric acid controls the crystallization and precipitation of tartrate salts. A complexation equilibrium exists in sugar solutions, and precipitation may occur due to factors such as acidity and temperature. It is usually dissolved by heating to boiling. In canned grape production, it should be added after the sugar solution cools below 50°C, and metal containers should be avoided.
