Melting point: 150-155°C (decomposition); boiling point: 446.3°C at 760 mmHg; flash point: 192.3°C; specific rotation: +65° (C=1, H2O). A freshly prepared 1% aqueous solution has a pH of about 3.5, decreasing to about 2.5 after 2 hours. In aqueous solution, it hydrolyzes to an equilibrium mixture of gluconic acid and the lactone.
Uses:Used in the food industry as a tofu coagulant, milk gelling agent, quality improver, and acidulant. It also serves as a chelating agent to prevent the formation of milk stone and wine tartar in dairy and brewing industries, and as a protein flocculant for treating protein-containing industrial wastewater.
