- 分子量176.12。白色晶体或结晶性粉末，无臭，有酸味。呈酸性，具有较强的还原性，加热或在溶液中易氧化分解，在碱性条件下更易被氧化。干燥状态下在空气中相当稳定，露置日光下色渐变深，受光照逐渐变褐；在空气存在下的溶液中则迅速变质，pH 3.4-4.5时较稳定。熔点187-192℃，闪点99℃。1g溶于约5ml水和30ml乙醇，0.5%水溶液pH≈3，5%水溶液pH≈2；不溶于氯仿、乙醚、非挥发性油脂和苯。有抑制多酚氧化酶作用。

Physical Properties:Molecular weight 176.12. White crystals or crystalline powder, odorless with a sour taste. Acidic and strongly reducing; readily oxidized and decomposed upon heating or in solution, especially under alkaline conditions. Fairly stable in dry air, but gradually darkens on exposure to light; deteriorates rapidly in solution in the presence of air. Stable within pH 3.4-4.5. Melting point 187-192°C, flash point 99°C. 1 g dissolves in about 5 ml water and 30 ml ethanol; pH of 0.5% aqueous solution is about 3 and 5% solution about 2. Insoluble in chloroform, ether, non-volatile oils and benzene. Inhibits polyphenol oxidase activity.
Uses:Mainly used as a nutritional supplement, antioxidant, color protectant and flour treatment agent. In the food industry, it is widely applied in fruit purees, beverages, canned fruits, candies, dairy products, cereal products and infant foods to inhibit polyphenol oxidase, prevent browning and maintain color and flavor. It is also added to beer, fermented flour products and carbonated beverages for nutritional fortification and oxidative stability.
