Physical Properties:Canthaxanthin is a carotenoid pigment appearing as orange-red to deep violet crystalline powder, odorless. It occurs naturally in mushrooms, crustaceans, fish, and eggs, and can also be produced synthetically. Insoluble in water, slightly soluble in ethanol and vegetable oils, readily soluble in chloroform, acetone, and other organic solvents. It exhibits antioxidant properties and is sensitive to light and oxygen; should be stored away from light in a sealed container. Melting point is approximately 215-218°C.
Uses:Primarily used as an animal feed additive to enhance the color of egg yolks and poultry meat, and to deepen the red color of salmon flesh. It is also employed as a food colorant for jams, candies, syrups, dressings, and carbonated beverages. Additionally, due to its antioxidant properties, it is incorporated into tanning pills to help protect the skin from UV rays and produce a tan-like appearance.
