- 红至紫红色粉末。可溶于纯水、甲醇、乙醇、冰醋酸、丙酮、稀盐酸和稀氢氧化钠溶液，不溶于石油醚等有机溶剂。分子结构中含有多个酚羟基，呈酸性；吡喃环上含四价氧原子，具有碱性，故亦能溶于稀酸和稀碱。耐热性好，可耐受巴氏消毒温度，受金属离子及食品添加剂影响小。

Physical Properties:Red to purplish-red powder. Soluble in pure water, methanol, ethanol, glacial acetic acid, acetone, dilute hydrochloric acid and dilute sodium hydroxide solution; insoluble in petroleum ether and other organic solvents. The molecule contains multiple phenolic hydroxyl groups, showing acidic character; the pyran ring contains a tetravalent oxygen atom, conferring basic character, thus it is also soluble in dilute acids and alkalis. It has good heat resistance and can withstand pasteurization temperatures, with little influence from metal ions and food additives.
Uses:Mainly used as a red to purplish-red colorant in the food industry.
