It can penetrate microbial cell membranes under acidic conditions (pH 2.5–4.0), inhibit respiratory enzyme activity, and thereby exert antibacterial effects.
Uses:Sodium benzoate is one of the most widely used acidic preservatives in the world. In the food industry, it is used for the preservation of soy sauce, vinegar, jams, preserved fruits, beverages, canned foods, pastries and other foods. In the pharmaceutical industry, it is used as a preservative in oral liquids, syrups and eye drops, and as a synthetic intermediate for drugs. In daily chemical products, it is used as a preservative in cosmetics, toothpaste and shampoo, and can also be used as a feed preservative, textile dyeing mordant and raw material for plastic plasticizers.
