Its sweetness is stable within pH 2-10 and under heating below 100°C (or UHT sterilization above 100°C), and it is stable to acids. It shows synergistic effects and flavor-improving properties when used with sugar sweeteners. Sweetness is about 2000-3000 times that of sucrose.
Uses:Used as a non-caloric sweetener and flavoring agent. Suitable for general foods and health foods, preferably combined with sucrose and other sugars in chewing gum, beverages, cold drinks, desserts, bakery products, coffee, chocolate, etc. It can improve the bitterness of certain amino acids, astringency of tannins, and coffee bitterness, enhance dairy and cocoa flavors, and also reinforce flavors in spices and seasonings.
