Physical Properties:Light yellow to dark brown transparent or translucent viscous liquid, or white to light brown powder/granule, with a slight soybean odor. Insoluble in water, but it can hydrate and swell in water to form a colloidal solution. Easily soluble in diethyl ether, petroleum ether, chloroform and other organic solvents; soluble in ethanol. Relative density about 0.98~1.03, with strong emulsifying, hygroscopic and antioxidative properties.
Uses:Used as an emulsifier, dispersant, antioxidant and nutritional supplement, widely applied in food, pharmaceutical, cosmetic and feed industries. In food, it improves the texture and mouthfeel of chocolate, baked goods, margarine, etc.; in pharmaceuticals, it is used to prepare liposomal drug carriers and liver-protective health products.
