Freely soluble in water, slightly soluble in ethanol; solubility in water 27 g/100 g at 20°C and 100 g/100 g at 100°C; soluble in 50% ethanol solution. Thermally stable up to 225°C, stable in pH range 2-10. Pure sweet taste, about 200 times sweeter than sucrose (3% solution).
Uses:Used as a high-intensity sweetener widely in food and beverage industries, such as baked goods, confectionery, beverages, jams, chewing gum, instant coffee, dairy products, jelly, pudding, alcoholic drinks; also used in toothpaste, cosmetics, syrup preparations, sugar-coated tablets and as a bitter-masking agent for pharmaceuticals. Since it is not metabolized in the human body and provides no calories, it is suitable as a sugar substitute for diabetic, obese and cardiovascular patients, and is also ideal for preventing dental caries.
