Physical Properties:White or colorless scale-like crystals, slightly acidic. Density 1.538, sublimes at 200°C and decomposes at 247–249°C. Slightly soluble in cold water, more soluble in boiling water, insoluble in ethanol and acetone.
Uses:Used as a salt substitute, nutritional supplement, and flavor enhancer in food industry, mainly for meat, soups, and poultry products. In pharmaceutical applications, it is used to treat hepatic coma and also as a biochemical reagent.

Assay: each mL of 0.1 mol/L perchloric acid is equivalent to 14.71 mg of L-glutamic acid
Usage limit: FAO/WHO specifies 10 g/kg for instant food broths and soups
