- 白色结晶或结晶性粉末，微有米糠样气味，味苦。干燥品在空气中迅速吸收约4%水分。熔点246~250℃。对热稳定（170℃），干燥状态下稳定，吸湿后缓慢分解着色。1%水溶液pH值为3.13，水溶液在pH2~4时稳定，pH5.5以上加热易分解，遇紫外线分解。在水中易溶，乙醇中微溶，乙醚中不溶。

Physical Properties:White crystalline powder with a slight rice-bran-like odor and a bitter taste. The dried product rapidly absorbs about 4% moisture in air. Melting point: 246~250°C. Stable to heat (170°C); stable in the dry state and can be stored for a long time, but slowly decomposes and discolors upon moisture absorption. The pH of a 1% aqueous solution is approximately 3.13. In aqueous solution, it is stable at pH 2~4, but is unstable when heated above pH 5.5. Decomposes under UV light. Freely soluble in water, sparingly soluble in ethanol, insoluble in ether.
Uses:Used as a nutritional fortifier in foods such as rice, wheat flour, bread, noodles, soy sauce, dairy products, margarine, pastries, soft drinks, and jams. Due to its decomposition under alkaline conditions and significant losses during food processing and cooking, other thiamine derivatives are preferred depending on the food matrix.
