Uses:Nuclease is a general term for a class of enzymes that catalyze the hydrolysis of phosphodiester bonds in nucleic acid molecules, playing a role in the first step of nucleic acid degradation. This product is mainly composed of 5'-phosphodiesterase and has strong enzymatic degradation ability against yeast nucleic acid, capable of directionally hydrolyzing RNA into 5'-nucleotides. When used in combination with deaminase, it is widely applied in the production of 5'-nucleotides and yeast extracts with high (I+G) content, significantly increasing the (I+G) content and enhancing the flavor of the products. It is also used for the industrial production of nucleic acid-based flavor nucleotides in the food industry.
