Physical Properties:White odorless crystals with a sweet taste; sweetness is about 45% to 65% of sucrose; slightly hygroscopic. Melting range 145-150°C; specific rotation ≥+91.5° (4% aqueous solution, w/v). Soluble in water; solubility at room temperature is lower than sucrose, but approaches sucrose upon heating; insoluble in ethanol. As a polyol, it is non-reducing, stable under acidic and alkaline conditions, does not readily develop color at high temperature, and has low hygroscopicity.
Uses:Isomalt is a functional food-grade sugar alcohol widely used as a sucrose substitute in sugar-free foods, dairy products, baked goods, seasoned foods, and health foods. It is suitable for diabetic patients and children, being non-cariogenic and not causing significant fluctuations in blood glucose or plasma insulin levels, while also acting as a bifidobacterium-promoting factor to support intestinal health. It is also used in pharmaceutical fillers, tobacco humectants and flavor carriers, cosmetics, and feed applications.
