Relative density: 1.525; melting point: 114°C; exhibits dextrorotation and mutarotation. Readily soluble in water (125 g/100 mL) and hot ethanol, slightly soluble in ethanol and diethyl ether. Not digested or utilized by the human body.
Uses:Used as a non-caloric sweetener suitable for obese and diabetic patients; also used as an antioxidant for fats, raw material for caramel color, and in the preparation of meat flavors such as pork through the Maillard reaction. Xylose promotes the proliferation of intestinal bifidobacteria, improves the human microbial environment, enhances immunity, and promotes calcium absorption when taken with calcium. It is also used to produce xylitol and serves as a pharmaceutical raw material and intermediate.
