It is extremely stable and rich in disulfide bonds; under normal conditions it is insoluble in water, salt solutions, dilute acids, and dilute alkalis, but dissolves in inorganic sulfide solutions. It can be divided into α-keratin and β-keratin: α-keratin contains abundant cystine; β-keratin (e.g., silk fibroin) lacks cystine and cysteine but has high contents of glycine, alanine, and serine.
Uses:Keratin is a major structural protein of hair, feathers, hooves, horns and other tissues, providing protective functions in animals. Wool and silk, whose main component is keratin, are important textile materials. In the leather industry, keratin's solubility in inorganic sulfide solutions is used for unhairing hides. It is also used as a lime slurry retarder and other building material additives.
