It is fairly stable in air in the dry state, but oxidizes readily in aqueous solution when exposed to air, metals, heat, or light. Freely soluble in water with a solubility of 55 g/100 mL; pH of a 1% aqueous solution is 7.4; practically insoluble in ethanol.
Uses:As a food antioxidant and preservative, it is widely used in meat products, fruits, vegetables, canned foods, jams, beer, soft drinks, fruit teas, juices, and wines to prevent oxidation, preserve color and natural flavor, and extend shelf life. In industry, it serves as an oxidizing agent, bleaching agent, decolorizing agent, and reducing agent.
