- 无色斜方晶结晶或白色结晶性粉末，无臭，味咸而酸，略有吸湿性。易溶于水，水溶液呈酸性（0.1mol/L水溶液25℃时pH为4.5），几乎不溶于乙醇。相对密度1.915，二水物熔点约60℃。100℃失去结晶水生成无水物，190-210℃转化为焦磷酸钠，280-300℃分解为偏磷酸钠。在潮湿空气中易结块。

Physical Properties:Colorless orthorhombic crystals or white crystalline powder, odorless, salty and acidic taste, slightly hygroscopic. Freely soluble in water, aqueous solution is acidic (pH 4.5 for 0.1 mol/L solution at 25°C), practically insoluble in ethanol. Relative density 1.915, melting point of dihydrate about 60°C. Loses water of crystallization at 100°C to form anhydrous salt, converts to sodium pyrophosphate at 190-210°C, and decomposes to sodium metaphosphate at 280-300°C. Prone to caking in humid air.
Uses:Used as boiler water treatment agent, acidity buffer, detergent, baking powder component, mica sheet bonding agent, dye auxiliary, and in leather making and electroplating industries. In food industry, it serves as quality improver, pH regulator, buffer, emulsifying dispersant, nutritional supplement and moisture retention agent for cheese, beverages, jelly, luncheon meat and other food processing. It is also a raw material for producing sodium hexametaphosphate and condensed phosphates, and can be used as pharmaceutical excipient and chemical reagent.
