Physical Properties:Light yellow to orange-red transparent liquid with a strong characteristic garlic odor and pungent taste. Insoluble in water and glycerol, readily soluble in ethanol, petroleum ether and other organic solvents. Relative density 1.050~1.090, boiling range 150~210°C, flash point approx. 70°C. The main active components are sulfur-containing compounds, such as allicin and diallyl disulfide.
Uses:Mainly used as a flavoring agent in food processing, including meat products, pickled vegetables and instant noodles. In the pharmaceutical and health product sector, it exhibits antibacterial, lipid-lowering and antioxidant activities and is widely used as a raw material for nutraceuticals. It is also applied in daily chemical products and botanical pesticide formulations.
