Uses:Transglutaminase catalyzes intra- and intermolecular covalent cross-linking of proteins, improving gelation, foaming, emulsification, thermal stability, water retention and water-holding capacity, thereby enhancing the flavor, taste, texture and appearance of foods. It can be used in meat products, fish products, noodles and tofu, can partially replace phosphates to produce low-salt meat products, can bind minced meat into shape, improve protein nutritional value, and can form edible packaging films.
