Melting point 136–147°C, specific rotation +40 to +50° (1% aqueous solution), pH 5–6 for 5% aqueous solution, isoelectric point pH 5.63. Boiling point 608.5°C (760 mmHg), flash point 321.8°C, refractive index 1.559. Sweetness about 2000 times that of sucrose, clean sweet taste, stable to heat, acid and alkali, with good storage and processing stability.
