Physical Properties:White crystal (industrial product often yellow powder), easily soluble in water and organic solvents, bitter and astringent taste. Stable within pH 4-8; degrades under strong alkali, strong acid, light, high heat, or transition metals. Heat-resistant up to about 250°C for 1.5 hours; decomposes in the presence of ferric ions. Nontoxic.
Uses:Tea polyphenols exhibit strong antioxidant activity, 4-6 times that of synthetic antioxidants BHT and BHA, 6-7 times that of vitamin E, and 5-10 times that of vitamin C. Effective at a low dosage of 0.01%-0.03%, they protect pigments and vitamins in food, maintain original color and nutritional quality over time, prevent spoilage of food and edible oils, and eliminate off-flavors.
