- 白色至浅黄褐色自由流动粉末，接近无臭。能分散于冷热水形成粘稠液，1%水溶液黏度约3000~5000 mPa·s，为天然胶中黏度最高者，添加少量四硼酸钠即转变为凝胶。分散于冷水约2h后黏度显著增强，24h达最大，加热可迅速达到最大黏度；水溶液中性，pH 6~8黏度最大，pH 10以上迅速降低，pH 3.5以下黏度又增大。主要成分为半乳糖与甘露糖(1:2)组成的半乳甘露聚糖，分子量5万~80万，不溶于乙醇等有机溶剂，溶液呈假塑性流体特性。

Physical Properties:White to light yellowish-brown free-flowing powder, nearly odorless. It disperses in hot or cold water to form a viscous solution; the viscosity of a 1% aqueous solution is about 3000–5000 mPa·s, the highest among natural gums. A small amount of sodium tetraborate converts it into a gel. After dispersion in cold water, viscosity increases significantly in about 2 h and reaches a maximum at 24 h; heating rapidly achieves maximum viscosity. The aqueous solution is neutral, with maximum viscosity at pH 6–8, rapid decrease above pH 10, and an increase again below pH 3.5. The main component is galactomannan composed of galactose and mannose (1:2) with a molecular weight of 50,000–800,000. It is insoluble in organic solvents such as ethanol, and its solution exhibits pseudoplastic fluid behavior.
Uses:Used as a thickener, stabilizer, and emulsifier, widely applied in the food industry in ice cream, flour products, beverages, dairy products, soy products, and meat products. It prevents ice crystal formation, improves mouthfeel, enhances the elasticity of noodles, and extends shelf life. It is also used in papermaking, pharmaceuticals, and textile printing and dyeing.
