Physical Properties:Pectin is a white to yellowish, light gray or light brown coarse to fine powder, almost odorless, with a viscous and smooth mouthfeel. It dissolves in 20 times its weight of water, forming a milky viscous colloidal solution with weak acidity. It has strong heat resistance and is almost insoluble in ethanol and other organic solvents. Its solubility can be improved by wetting with ethanol, glycerol, sugar syrup, or mixing with more than three times its amount of sugar. It is more stable in acidic solutions than in alkaline solutions.
Uses:Pectin is widely used in the food industry, for example in the manufacture of jams and jellies, preventing hardening of pastries, improving cheese quality, and making fruit juice powder. High-ester pectin is mainly used in acidic jams, jellies, gelled candies, candy fillings, and lactic acid bacteria beverages. Low-ester pectin is mainly used in ordinary or low-acid jams, jellies, gelled candies, frozen desserts, salad dressings, ice cream, and yogurt.
