- 白色或淡黄色粉末，溶于水，不溶于乙醇和乙醚。作用于可溶性淀粉、直链淀粉、糖原等α-1,4-葡聚糖，水解α-1,4-糖苷键，以Ca2+为必需因子并作为稳定因子和激活因子。能随机切断糖链内部的α-1,4-键，使底物溶液粘度急剧下降、碘反应消失；分解直链淀粉时以葡萄糖为主，另有少量麦芽三糖和麦芽糖；分解支链淀粉时还生成α-极限糊精。一般分解限度为35-50%，细菌淀粉酶可高达70%。

Physical Properties:White or light yellow powder, soluble in water, insoluble in ethanol and ether. It acts on α-1,4-glucans such as soluble starch, amylose and glycogen, hydrolyzing α-1,4-glycosidic bonds. Ca2+ is an essential factor, acting as both stabilizer and activator. It randomly cleaves internal α-1,4 linkages, causing a rapid decrease in substrate solution viscosity and disappearance of iodine reaction. Decomposition of amylose mainly yields glucose, with small amounts of maltotriose and maltose; decomposition of amylopectin also produces α-limit dextrins with α-1,6 linkages. The general limit of dextrinization is 35-50%, and bacterial amylases can reach 70%.
Uses:Used in fruit juice processing for starch decomposition and improving filtration speed, as well as in vegetable processing, syrup manufacturing, and glucose production. It is also widely applied in baking and maltose manufacturing to improve product texture and saccharification efficiency.
