Stable in the presence of reducing agents (e.g., cysteine, 2-mercaptoethanol); heavy metal ions and oxidizing agents cause inactivation.
Uses:Chymopapain is mainly used for the treatment of lumbar disc herniation, administered by percutaneous injection into the intervertebral disc to dissolve and decompress the nucleus pulposus, thereby relieving nerve compression symptoms. It is also used in the food industry as a meat tenderizer and beer clarifier, and serves as a proteolytic tool enzyme in protein structure and function research.
