Physical Properties:Yellow powder; density 1.00 g/mL at 20°C. Soluble in water, insoluble in ethanol, ether and other organic solvents. Active at pH 3.5-6.5 and temperature 20-70°C, with optimum temperature 30-40°C. Stable for more than one year at 2-8°C.
Uses:Glucose oxidase catalyzes the oxidation of glucose to gluconic acid and hydrogen peroxide. It is widely used in the food industry to remove glucose and dissolved oxygen, preventing browning and spoilage, preserving flavor and extending shelf life. In flour processing, it oxidizes sulfhydryl groups in gluten to disulfide bonds, strengthening dough and replacing potassium bromate. It is used as a diagnostic enzyme for blood glucose and urine glucose assays, and as a stabilizer for vitamins C and B12 in pharmaceutical preparations.
