Physical Properties:This enzyme is a white to light brown powder or liquid, readily soluble in water and insoluble in organic solvents such as ethanol and ether. The optimum pH is generally 4.5-6.5, and the optimum temperature is usually 40-60°C. It exhibits good stability at pH 5.0-7.0 and low temperatures. It catalyzes the hydrolysis of α-1,4-glycosidic and α-1,6-glycosidic bonds.
Uses:α-Glucosidase is mainly used to catalyze the hydrolysis of α-1,4-glycosidic and α-1,6-glycosidic bonds in starch or oligosaccharides, releasing glucose. It is applied in the food industry for glucose syrup production, reduction of fermentable sugar content in beer brewing, and synthesis of functional oligosaccharides. It is also used as a biochemical research reagent and clinical diagnostic reagent for measuring α-glucosidase activity in blood or urine.
