The optimum temperature is about 37-50°C with relatively poor thermal stability. Its activity is inhibited by ammonium ions and the product glutamate.
Uses:It catalyzes the hydrolysis of L-glutamine to L-glutamic acid and ammonia. It is used in the food industry to enhance umami flavor and reduce monosodium glutamate dosage. It is also applied in biochemical engineering for the quantitative analysis of glutamine, enzymatic detection of ammonia, and treatment of wastewater containing glutamine.
