- 白色粉末，无臭无味；吸湿性强，遇水膨胀，缓慢溶于水形成高粘度透明溶液，0.2%水溶液粘度约为400 cp；水溶液pH值一般6~9；易溶于氢氧化钠水溶液，遇二价以上金属离子（如铝、铁、铅、钙、镁、锌）生成不溶性盐，引起分子交联而凝胶沉淀；加热处理、中性盐类、有机酸类对其粘度影响很小，碱性时粘度增大，久存粘度变化极小，不易腐败。

Physical Properties:White powder, odorless and tasteless; strong hygroscopicity, swells in water, slowly dissolves to form a highly viscous transparent solution; viscosity of 0.2% aqueous solution is about 400 cp; pH of aqueous solution generally 6–9; readily soluble in sodium hydroxide solution; forms insoluble salts with divalent or higher metal ions (e.g., aluminum, iron, lead, calcium, magnesium, zinc), causing molecular crosslinking and gel precipitation; heating, neutral salts and organic acids have little effect on its viscosity, while alkaline conditions increase viscosity; viscosity changes little during long-term storage and it is not easily spoiled.
Uses:Sodium polyacrylate is a food additive approved by the FDA, Japanese Ministry of Health and Welfare, and Chinese health authorities. It can be used as a thickener, stabilizer, clarifying agent, dehumidifier and preservative. In flour products, it strengthens gluten network, improves extensibility and water retention, and enhances texture. In meat products, it improves protein fiber viscoelasticity, modifies tissue and increases elasticity. It is also used in starch products such as vermicelli to improve strength and cooking resistance, and in frozen foods, sauces, jams, etc. for thickening and stabilization.
