Physical Properties:Off-white to light gray amorphous powder or light gray to dark brown liquid; the commercial product may contain food-grade diluents, carriers, stabilizers, and preservatives. Soluble in water, almost insoluble in ethanol, chloroform, and ether. It is a general term for various enzymes that decompose polysaccharides (excluding cellulose and pectin) in plant cell walls, hydrolyzing β-1,4-glycosidic bonds in polysaccharides such as locust bean gum and guar gum into oligosaccharides.
Uses:Mainly used as an enzyme preparation in grain and vegetable processing; combined with pectinase and cellulase, it can clarify citrus fruit juices; treating coffee beans increases the coffee extraction rate, and treating soybeans improves vegetable oil extraction rate and digestibility. Used in alcoholic fermentation of sake, shochu, and similar beverages, it increases the utilization rate of fermentation raw materials and improves fermentation efficiency. It is used for pre-bleaching of pulp and producing high-purity cellulose pulp in the pulp and paper industry. It can also bioconvert waste lignocellulosic materials into single-cell protein, ethanol, and other useful substances.
