Physical Properties:Light yellow powder or liquid, soluble in water, almost insoluble in ethanol, ether and other organic solvents. The suitable pH range is 4.0-6.0, and the optimum temperature is 40-60°C. It is easily inactivated under high temperature and strong acid/alkali conditions.
Uses:β-Glucanase can hydrolyze 1,3- and 1,4-glycosidic bonds in β-glucan. It is commonly used in beer brewing to reduce wort viscosity, accelerate filtration and improve beer clarity. In feed industry, it decomposes β-glucan in barley, oats and other raw materials to improve feed conversion rate. It is also used in food processing and plant polysaccharide modification.
