Physical Properties:White or off-white powder, odorless and tasteless, hygroscopic; soluble in cold water forming a viscous colloidal solution, insoluble in ethanol and ether; high dispersibility, fast hydration rate, high viscosity, high swelling power and good freeze-thaw stability.
Uses:It is mainly used as a thickener, gelling agent, binder and stabilizer in food industry, suitable for flour products, dairy products, meat products, baked goods, beverages, candies and frozen foods. It improves texture, mouthfeel and gloss of products, prevents separation and retrogradation, and can partially replace expensive ingredients such as gum arabic and caseinate to reduce production costs.
