- 白色或浅褐色颗粒或粉末，无臭或微臭，口感粘滑。可溶于约80℃的水，形成粘性、透明或轻微乳白色的易流动溶液；若先用乙醇、甘油或饱和蔗糖水溶液浸湿，则较易分散于水中。与30倍水煮沸10分钟的溶液，冷却后即成胶体。与水结合粘度增加，与蛋白质反应起乳化作用，使乳化液稳定。固化性仅取决于温度。1%水溶液的粘度为0.225Pa·s（pH7.0）。

Physical Properties:White or light brown granules or powder, odorless or with slight odor, smooth and sticky to the touch. Soluble in water at about 80°C, forming a viscous, transparent or slightly milky, free-flowing solution. It disperses more readily in water if pre-wetted with ethanol, glycerol, or a saturated sucrose solution. A solution boiled with 30 times its weight of water for 10 minutes forms a gel upon cooling. It increases viscosity when combined with water, emulsifies in reaction with proteins, and stabilizes emulsions. Its gelling property depends only on temperature. The viscosity of a 1% aqueous solution is 0.225 Pa·s (pH 7.0).
Uses:Carrageenan is used in the food industry as a thickener, gelling agent, suspending agent, emulsifier, and stabilizer. It is commonly used in jelly production, giving products elasticity and preventing water separation. In soft candies, it improves mouthfeel, transparency, and stability.
