Physical Properties:Red-brown to dark red-brown granules or powder, odorless. Easily soluble in water (17.2 g/100 mL, 21°C) and glycerol, giving a violet aqueous solution; slightly soluble in ethanol (0.5 g/100 mL, 50% ethanol). Resistant to light and heat (up to 105°C), but poor resistance to oxidation and reduction. Stable to citric acid and tartaric acid; turns dark red in alkali; faded by copper and iron.
Uses:Used as a food red colorant, mainly for coloring beverages, candies, pastries and other food products.
