Physical Properties:Soluble in cold water, forming an ordered and stable structure in aqueous solution with high viscosity; exhibits pseudoplastic fluid behavior (shear-thinning) and good suspension ability under static conditions. Stable within pH 2-12 and has good salt tolerance; can form a weak gel in the presence of NaOH upon heating. Heat-reversible: viscosity does not decrease after sterilization at 121°C for 15 min, and viscosity loss caused by temperature rise is fully recovered upon cooling. Good compatibility with other gums.
Uses:Welan Gum can be used in the food industry for bakery products, dairy products, fruit juices, milk drinks, icing, frostings, jams, meat products, and various desserts. In the petroleum industry, it is used to prepare drilling mud to maintain water-based drilling fluid viscosity and control rheological properties, and as an oil-displacing agent for tertiary oil recovery, as well as in well completion, workover, formation fracturing, and as a flow improver for heavy oil transportation. In cement and concrete, it enhances water retention, plasticity, suspension capacity, sag resistance, flow characteristics, and water-loss resistance.
