Physical Properties:Red rhombic crystals or reddish-brown powder. Insoluble in cold water, slightly soluble in hot water or ethanol. Good heat resistance, light resistance, and oxidation resistance. Strong dyeing power and good affinity with meat proteins. Darkens in alkali and turns yellow in acid.
Uses:Used as a food colorant in carbonated beverages, sausages, ice cream, yogurt, candies, seasoning sauces, baked goods, jams, and jellies. Also applied in cosmetics and pharmaceuticals, and used as an indicator in ammonia titration and as a reagent in microscopic and fluorescence analysis.
