Freely soluble in water, very slightly soluble in ethanol, practically insoluble in ether. Heat-resistant and sublimable. Melting point approximately 190°C (decomposition). Specific optical rotation +25° to +27° (in water).
Uses:As vitamin B5 nutritional supplement, mainly used as food additive and feed additive, it is an essential trace substance for maintaining normal physiological functions of humans and animals. In food industry, it can be used for nutritional fortification; adding 0.02% to shochu or whisky enhances flavor, adding 0.02% to honey prevents crystallization in winter, and it can buffer the bitter taste of caffeine and saccharin.
