Physical Properties:White crystalline powder, sweet taste, about 200 times sweeter than sucrose. Melting point 220℃ (decomposes). Slightly soluble in water and dilute ethanol, easily soluble in hot water, forming a viscous gel upon cooling; insoluble in oils, soluble in propylene glycol. Aqueous solution is weakly acidic.
Uses:Mainly used as sweetener, sweetness improver and flavoring agent, especially effective when combined with salt; also used as flavor enhancer in dairy products, meat products, baked goods, seasoned foods, etc.; used as active ingredient or excipient in pharmaceuticals; in tobacco industry, can replace glycerin as humectant and flavoring agent for cut tobacco.
